Mushroom, Walnut Quinoa with Fried Egg and Watercress Salad

Ingredients: 

2 Tbs olive oil
1 clove garlic, minced
1 cup mushrooms (shiitake, oyster and baby bella)
1 cup quinoa, rinsed
2 cups chicken stock
1/2 tsp salt
1 Tbs mascarpone
1 Tbs walnuts, chopped
1 Tbs fresh parsley, chopped
1 Tbs chives, chopped
Eggs, to fry
Watercress to garnish
Salt and pepper to taste
