Mustard and White Wine Braised Chicken

Ingredients: 

2 tbsp. olive oil
2 lb. chicken thighs and drumsticks
Kosher salt and freshly ground black pepper
4 shallots, halved lengthwise and thinly sliced
3 cloves garlic, thinly sliced
½ cup dry white wine
1 cup chicken stock
¼ cup whole grain mustard
1 tbsp. finely chopped thyme
2 tbsp. roughly chopped tarragon, for garnish
