3/4 cup all-purpose flour
1/4 cup whole wheat flour
1/2 cup sugar or sugar substitute* equivalent to 1/2 cup sugar
1 1/2 teaspoons pumpkin pie spice
1 teaspoon baking powder
1/8 teaspoon salt
1 cup finely shredded carrot
3/4 cup chopped walnuts or pecans, toasted
1/3 cup refrigerated or frozen egg product, tha1/3 wed, or 3 egg whites, lightly beaten
1/4 cup cooking oil
1/4 cup fat-free milk
1 recipe Fluffy Cream Cheese Frosting (see recipe below)
