Paleo and Vegan Pesto stuffed mushrooms

Notes: 

Yesterday after my training I needed a meal full of proteins. Since I didn’t cook beforehand, I needed a quick solution. Mushrooms - easy to make and full of proteins.

Ingredients: 

12 mushrooms
2 tbsp. extra-virgin olive oil
Half a tomato
¼ cup pesto
Salt and pepper


  1. Brush the mushrooms on both sides with olive oil and season with salt and pepper.
  2. Heat a large skillet over a medium heat and cook the mushrooms 5 minutes on each side, or until just tender.
  3. Fill each mushrooms with pesto sauce.
  4. Add diced tomatoes on top.
  5. Serve and enjoy!
