Ingredients: 

carrots - 2 small, peeled, trimmed and cut into one-inch lengths
small yellow onion - 1, peeled and roughly chopped
garlic - 2 cloves
fat of choice: grassfed butter, ghee, coconut oil, lard, etc. - 1 1/2 Tbsp
cauliflower - 1/2 large or one small head, roughly chopped
diced tomatoes with their juices - one 14.5 ounce can (I like Muir Glen Fire Roasted.)
chicken stock (preferably home made) - 1 cup
chopped green chiles - 4 ounces
home-made taco seasoning mix (see link above) - 1 Tbsp plus 2 tsp
freshly squeezed lime juice - 1 Tbsp
