these are seriously the best pancakes i have ever tasted (and i am something of a pancake connoisseur).


1.5 c. milk
1.5 - 2 tbsp white vinegar
2 c. all-purpose flour
2 tbsp white sugar
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 eggs
1 tbsp butter, melted
1 tsp vanilla

Combine milk & vinegar in bowl and set aside for 5 minutes to "sour."  Heat oil in skillet.  Combine dry ingredients (flour, sugar, powder, soda, salt) in large bowl.  Whisk egg, butter and vanilla into "soured" milk.  Pour dry mixture into wet and whisk until lump-free.  Pour 1/4 cupfuls of batter onto surface, and cook until bubbles appear.  Flip, and cook until lightly browned on other side.
