Pasta And Sausage Soup Recipe

Notes: 

I adjusted this into a crock pot recipe. You can also use whatever vegetables you`d like. Potatoes diced an cut green beans, carrots, corn would also be great. Instead of fresh tomatoes you can use a large can of diced tomatoes. Other variations is substitute chopped cabbage for pasta, even hamburger for Italian sausage. Also you can use many types of pasta, even tortollini!

Ingredients: 

1-1/2 pounds sweet Italian Sausage
1 medium onion, chopped into 1/4" chunks
1 medium green pepper, cut into 1/4" chunks.
2 cups of zuchinni cut into small chunks.
2 garlic cloves, minced
3 large tomatoes
1/4 cup tomatoes paste
6 cups chicken stock or water/boullion
2 to 2-1/2 cups uncooked bow tie pasta
1 tablespoon sugar
1 tablespoon Worcestershire sauce
1 teaspoon salt
1 tablespoon of Italian Seasoning.


Remove casings from sausage cook in large chuncks. In a skillet, brown sausage over medium heat. Remove sausage with a slotted spoon; drain, reserving 2 tablespoons drippings.

Three tomatoes seeded and quartered, place in a food processor and add tomato paste. Run until you get a chunky texture.

In a crock pot place all ingredients except pasta and zuchinni. Cook on low for 2 hours. Add pasta and zuchinni and continue cooking for 2 hours.
