Pastina with Peas and Carrots

Ingredients: 

1/2lb Pastina
2 tbs olive oil
1 small onion finely diced
2 medium carrots peeled and diced
1 cup chicken stock
1 cup frozen peas
1/2 cup (4 oz) cream cheese
1/2 cup (4 oz) mascarpone cheese


Bring a large pot of salted water to boil. Add pasta and cook till tender. Drain, reserve 1 cup pasta water.

Heat oil in skillet, add and cook onion. Add carrots and stock, bring to boil. Reduce heat and simmer 5 min. Add peas and cook 2 min. Stir in cooked pasta.

Remove pan from heat and add cheese. Season w/ salt and stir. Garnish w/ fresh basil if desired.

Serves 6
