Peppermint Patties

Notes: 

Lots of fun to make. Make them special by using various topping like Christmas sprinkles or sculpt chocolate designs. Watch how much extract you use, our first batch was way to strong.

Ingredients: 

1 cup sweetened condensed milk
4 cups confectionary sugar
1 1/2 teaspoons peppermint extract
16 oz dark chocolate
2 tbsps. shortning


Pour sweetened condensed milk into large mixing bowl add peppermint extract. Slowly add the confectionary sugar mix well. Once you have it well moistened mix by hand eventually you will get it to a dough like consistency. Turn out onto a confectionary sugared counter and continue to mix until you can form a large disc. Wrap in plastic wrap and chill for about two hours. Once chilled on a sugared surface roll out just like pie dough to about 1/8" of an inch thick. Cut into round discs using a shot glass or any size you like. Chill for another half hour while you prepare chocolate. In a double boiler melt chocolate, once melted add shortening, mix well. Let chocolate cool then using a fork coat discs and place on parchme t lined tray to set. Once tray is full cool in fridge for two hours. Makes approximately 42, 1 1/2 discs.
