The night before (Poolish):
2.5 cups bread flour
1.5 cups water
1/4 tsp rapid rise yeast

The next day:
1 1/2 cups all purpose flour
1 1/2 tsp rapid rise yeast (see note)
1 1/2 tsp salt
2 tbs olive oil
2 - 4 tbs warm cup water
