Plum Upside Down Cake

Ingredients: 

1 1/4 cup sifted flour
1 1/4 tsp baking powder
2/3 cups sugar
1/4 tsp salt
4 tbsp softened butter
1/2 cup milk
1 egg well beaten
1 tsp vanilla
2 tbsp brown sugar packed
2 tbsp butter
3 cups fresh plums, pitted and halved


  1. Sift flour once then add baking powder, salt and sugar and re-sift 3 times
  2. Combine softened butter, egg, milk and vanilla.  Add to flour and mix well.
  3. Melt 2 tbsp butter in 8x8" pan then add brown sugar.
  4. Arrange fruit, cut side down, on top of the butter/brown sugar.
  5. Pour batter over the fruit.
  6. Bake at 350 degrees for 45 minutes or until cake is done.
  7. Cool slightly and invert onto serving plate.
