Poached Salmon And Eggs Breakfast

With a little advance prep the night before, this is a gluten free breakfast I can make in 5 minutes

Ingredients

  • Salmon, poached in advance
  • Eggs
  • Asparagus
  • Lemon
  • Salt
  • Pepper

Directions

  1. Poach salmon the night before (place salmon in pot, cover with water, cover pot, boil water,  remove heat, let sit 10 minutes, drain and save)
  2. Scramble egg
  3. Rinse and microwave asparagus ( about 45 seconds ) then put in cold water to stop cooking
  4. Squirt lemon on asparagus and salmon
  5. Plate and season with salt and pepper to taste

Preparation Time: 5 minutes
