Poi Nut Bread

Ingredients: 

 1 lb Poi
 3/4 c Water
 2 c Gluten-Free* All Purpose Flour
 3/4 c Sugar
 2 ts Cinnamon
 2 ts Baking powder
 1 ts Salt
 3 Eggs; slightly beaten
 1 c Oil
 2 ts Vanilla
 1 1/2 c Macadamia Nuts


  1. First: Mix poi and water together and let stand in bowl. Next: Mix together flour, sugar, cinnamon, baking powder, salt in another bowl. Combine the above mixtures with the remainder of the ingredients and place in greased loaf pans. Bake at 350 degrees for 45 minutes. Optional: Add 1/2 cup raisins
