Pork and Guinness Hand Pies

For the Dough
2 1/2 cups flour (spooned and leveled)
1 teaspoon salt
2 sticks cold unsalted butter, cut into 1/2 inch pieces
1/4 cup ice cold water

For the Filling
1/2 tablespoon olive oil
1 cup finely chopped red onion, about 1 small
3 medium cloves garlic, finely chopped
1 pound ground pork
Kosher salt and freshly ground pepper
1 pound sweet potato, peeled and cut into 1/2 inch pieces
1 cup Guinness
1/3 cup dried cherries, roughly chopped
1/4 teaspoon ground ginger
1/4 teaspoon cinnamon
pinch of cayenne
1 egg, lightly beaten
