Pork Loin Roast with Caramelised Apple, Spinach & Horseradish Cream


500g free range pork loin, cut in halves
1 tsp smoked or sweet paprika
1/2 tsp pepper
1 tsp sea salt
1/2 tsp garlic powder or 1 garlic clove
2 tsp ghee
1 white onion, peeled and finely sliced
1 green apple, peeled and grated
2/3 cup of orange juice (1 1/2 oranges)
1 1/2 tbsp lemon juice
1 tsp Allspice
A small pinch of sea salt
2 tsp coconut oil
1 bunch of spinach
1/2 tbsp olive oil
2-3 tbsp sour cream or creme fraiche
1 1/2 tsp grated or store bought horseradish
1/2 tsp Dijon mustard
A pinch of sea salt
