Pork Tenderloin

Ingredients: 

Olive oil
Pork tenderloin
Salt
Pepper
Cayenne
Chile powder
Carrots, if desired
Onions, if desired
Mustard, for sauce
Coffee, for sauce


Directions

  1. Season tenderloin with salt, peper, cayenne, chile powder. Let sit in refrigerator to 24 hours.
  2. Preheat oven to 425
  3. Heat a cast iron pan on a burner, over medium-high heat. Add a splash of olive oil. Sear tenderloin on all sides.
  4. Place tenderloin in oven. After 15 minutes, lower temperature to 275 and cook for about 10 minutes per pound.
  5. Add carrots and onions, and a bit of water, to the pan about 15 minutes before the end.
  6. When meat is cooked, remove and set aside.

Tips / Substitutes: To the pan, you can add mustard and, if necessary, water. You can also add a splash of wine or coffee--whichever is around. Mix it all up to make a sauce for the pork. Enjoy.
