The fresh salsa makes this incredible. You can't go wrong. Feel free to experiment with the salsa, adding more or less ingredients as you desire.
- Leftover pot roast
- Fresh salsa (recipe below)
- Corn tortillas
- Paprika to sprinkle
- Sour cream for garnish
- Shredded cheese for garnish
- Sliced avocado for garnish
- Extra cilantro and onions for garnish too
FOR THE SALSA
- A medium tomato chopped (or a 14oz can of quality diced tomatos)
- a small red onion finely chopped (about 1/2 or more of a cup)
- 1 Jalepeno pepper finely chopped (or other chili variety.)
- A bunch of fresh cilantro leaves, washed & finely copped
- 2 limes, juiced
- 1 teaspoon of sea salt (more if desired)
- 1/2 teaspoon of cumin powder
- Pepper to taste
