for 1 pound cake tin
2 small potatoes (or 1 large potato)
80g bacon
50g cheese (chedder etc., not cream cheese)
30g olive oil
2 eggs
60g plain flour

1. Preheat the oven 170C.
2. Microwave potatoes for 2-3 minutes and dice them (bite size).
3. Dice bacon and cheese (1cm cube).
4. Crack in eggs into a bowl and whisk it, adding olive oil little by little.
5. Add potatoes, bacon and cheese.
