Ingredients: 

3 tablespoons oil
1 cup sliced leeks or onions in a small dice
About 4 cups potatoes, cut in chunks
Liquid to cover potatoes: water, low-sodium chicken broth or a combination of the two
1 large bay leaf
1 teaspoon dry thyme
1 teaspoon salt
Freshly ground black pepper
Liquid to thin soup: chicken broth, milk or cream
