All I have to say is: "YUMMY!" Hope you enjoy it. :) Ps. Sorry the ingredients are out of order. Still not real proficient at submitting recipes.
Prep Time: 15-20 minutes
Cook Time: 1 hour

Ingredients
1 1/2 c brown rice flour
1 Tbsp. ground flax
1 tsp cinnamon
1 tsp nutmeg
1 tbsp baking powder
1/2 tsp salt
4 eggs
1/2 c water
1 c melted butter
1/2 c chopped walnuts
1 c xylitol
1 1/2 c spelt flour
2c pureed pumpkin
Directions
Preheat oven to 350 and grease 8x8 pan or 2 loaf pans. Mix together melted butter, eggs, xylitol, pumpkin, and water. Mix in separate bowl: rice flour, spelt flour, baking powder, salt, cinnamon, nutmeg, flax, and nuts. Add dry ingredients to wet and mix just until blended. Pour into prepared pan(s). Bake 1 hour or until toothpick inserted comes out clean.
