Pumpkin Waffles

Ingredients: 

1 cup quinoa flour
1 cup quinoa flakes
1/8 cup packed brown sugar
1 teaspoon kosher salt
2 teaspoons baking powder
1 tablespoon pumpkin pie spice
2 large eggs
1 (15 oz) can pure pumpkin puree
1 tablespoon molasses
1 cup whole milk


  1. In a medium bowl, stir together the quinoa flour, quinoa flakes, brown sugar, salt, baking powder, and pumpkin pie spice.
  2. In another medium bowl, whisk together the eggs, pumpkin puree, molasses and milk.  Stir in the quinoa flour mixture into the egg mixture until combined.  Set aside for 5 mins.
  3. Heat an 8-inch waffle iron on medium heat.  Coat the upper and lower plates with cooking spray.  Pour 1 1/2 cups of batter into the center of the waffle iron; spread evenly with a spatula until it almost reaches the edges.  
  4. Cook on medium heat for one cycle, then turn the waffle iron to high heat and cook for additaional cycle. Remove the waffle and repeat with the remaining batter.  Keep warm in a 170 F. oven until ready to serve.

 

 

Makes: 12 waffles
