Quinoa Kale Tomato Corn Salad

Ingredients: 

1 cup cooked quinoa
2 cups kale, chopped
1 cup cherry tomatoes, halved
½ cup corn
1 scallion, chopped
1 garlic clove, minced
zest and juice from 1 lemon
2 tablespoons extra virgin olive oil
salt and freshly ground pepper, to taste
freshly grated Bellevitano cheese or your favorite cheese, optional
