1 cup of nuts of your choice (I used almonds and walnuts)
2 tablespoons of shredded coconut
1 tablespoon of coconut oil
2 tablespoons of maple syrup
2 tablespoons of cocoa or cacao powder
5-6 dried cherries and some water to soak them – optional
Soak your dried cherries in some water for about an hour. Then take them out of the water, but keep the water as well.
Put the nuts and the shredded coconut into the food processor and grind them. Add the rest of the ingredients and grind until everything is well combined and has the consistency of wet sand. It should stay together when you press it. If the mixture feels too dry, add a few drops of water (you can use the cherry water too).
Take spoonfuls of the mixture and shape them like balls.The mixture is a little dry and you may not be able to roll balls, so just squeeze the mixture to make it look like a ball. Add half a candied cherry or a nut and press the ball between your hands to make it flatter. Don't worry: once chilled, everything blends well and the cookie stays together.
You should be able to make between 12 and 15 small cookies, but since I was tempted to eat some of the mixture, I made only 12. :D
