Ingredients: 

2 medium fingerling potatoes
4 slices of bacon
1 1/2 tablespoons extra-virgin olive oil
1 medium onion, thinly sliced
Salt and freshly ground pepper
All-purpose flour, for rolling
1/2 pound cold all-butter puff pastry
1/4 pound Reblochon cheese, rind removed and cheese thinly sliced
