Rock Bottom Brewery Spinach Dip

Notes: 

Serves 8

Ingredients: 

1 C tomatoes, drained and diced
4 oz frozen spinach, thawed and squeezed dry
1/2 C sweet red peppers, drained and diced
1 1/2 C yellow onions, minced
1 1/2 C half-and-half
3 3/4 lb pepper jack cheese, grated


  1. Sweat onions in a saucepan. Add half-and-half and bring to a boil.
  2. Slowly add grated cheese, stirring until all cheese is melted and smooth.
  3. Add spinach and blend. Mix in tomatoes and peppers, stirring to remove any lumps.
