Ingredients: 

1/4 cup rolled oats
1 egg
1/4 cup egg whites
1/2 cup grated carrot*
1/2 cup grated parsnip*
1/2 cup grated rutabaga*
1/2 tsp coconut oil
salt and pepper to taste
*grate all veggies into as long strips as possible! it will make for more stable fritters
