Saganaki

Notes: 

If can't find specified cheeses, can use provolone or mozzarella

Ingredients: 

1 lb soft Kasseri, Kaser or Kofalotiri cheese
3 T olive oil
1/2 lemon
2 T brandy
Spices: thyme, oregano, rosemary, marjoram, basil, parsley


  1. Cut cheese into slices 1/4" thick. Rub with spices. Place in boiler pan and brush with melted oil.
  2. Broil on high 4-6" from heat until cheese bubbles. Remove from heat.
  3. Pour brandy over cheese and ignite immediately.
  4. Squeeze lemon over cheese.
  5. Serve with bread. Opa!
