1 3-ounce package thinly sliced pancetta (Italian bacon), chopped
2 cups all purpose flour
2 tablespoons sugar
3 1/2 teaspoons baking powder
1/2 teaspoon salt
6 tablespoons (3/4 stick) chilled unsalted butter, cut into 1/2-inch cubes
1 cup coarsely grated Fontina cheese
1 tablespoon chopped fresh sage
3/4 cup plus 2 tablespoons chilled buttermilk
