Salmon Avocado Salad

2 6-oz salmon filets
1 tbsp olive oil, plus an additional tbsp for salad dressing
2-4 cups bbib lettuce torn into bite-size pieces
1/2 ripe avocado, peeled and cubed
1/2 red onion, thinly sliced
10 cherry tomatoes, halved
1 tbsp capers
2 tbsp balsamic vinegar
1/2 tbsp dijon mustard

  1. Preheat oven to 375 degrees.  Arrange salmon on a parchment-lined baked sheet.  Drizzle with olive oil, season with salt and pepper.
  2. Roast for 15 minutes until tender.   Remove from oven and set aside.
  3. Add lettuce to two separate bowls.
  4. Divide avocado, onions, tomatoes and capers ovor the two servings.
  5. Top each with 1 filet of salmon.  Skin removed.


Salad dressing

Mix vinegar, mustard and remaining tbsp of olive oil.
