Sausage and Cabbage Suup

Ingredients: 

2 tablespoons olive oil
3 cloves garlic minced
1/2 large cabbage shredded
1 carrot chopped coarsely
1 potato chopped coarsely
5 sliced thinly smoked sausage links
3 stalks of celery chopped coarsely
1/2 large onion chopped coarsely
1 large container low salt chicken broth (32 oz)
1 chicken bouillon cube
1 small can diced tomatoes (14.5 oz)
1 can tomato sauce (8 oz)
1 zucchini cubed
2 tablespoons chopped fresh basil or 1 tablespoon dry basil
1/2 tablespoon oregano
1/4 teaspoon black pepper
1/4 cup grated Parisian cheese plus more to sprinkle on top of soup bowl


  1. In large pan put oil. heat over medium heat. Add potatoes, carrots, celery, and onions. Saute until carrots begin to soften.  Add sausage and garlic saute 3 more minutes. 
  2. Put vegatables with sausage into crock pot. (6 qt)
  3. Add cabage, diced tomatoes, tomato sauce, chicken boulin cube, basil, pepper, and oregano.
  4. Pour chicken broth over all.
  5. Cook on high 5 hours. Stir every 2 hours.
  6. Add zuchini and stir. Cook 1/2 hour more or until zuchini and vegetables are tender.
  7. Add 1/4 cup parmasian cheese. Stir until cheese is blended into soup and begins to melt. 
  8. Laddel into soups bowls and sprikle with parmaisian cheese.
