Ingredients
- 1 seedless watermelon
- 8 oz cream cheese
- 6 oz blue cheese crumbled
- 1 package micro greens
Directions
Prepare the WATERMELON TOWERS:
- Cut watermelon in half with flat side on cutting board slice 1 1/4 " sections.
- Take one section and lay flat on cutting board. Using a round cutter, cut out as many towers as possible from each section.
- Using a melon scoop carefully scoop out the insides of each of the towers leaving at least a 1/8" wall and bottom for each tower.
Prepare the BLUE CHEESE MOUSSE:
- In a mixing bowl cream together cream cheese and blue cheese until smooth.
Complete the WATERMELON TOWERS:
- Fill a pastry bag with the mousse and pipe mixture into watermelon tower.
- Garnish with a few micro greens.
