Simple Roasted Veggies

Notes: 

Season with: salt & pepper, paprika, cumin, cayenne, crushed red peppers, thyme, rosemary, sage, herb mixes e.g. Italian, Mexican, Old Bay - whatever fits the meal and your taste.

I think cinnamon would be delish!

Ingredients: 

veggies (zucchini and carrots - or anything else)
1 T olive oil
seasonings (see note)


  1. Cut veggies into 3" sticks. Line baking sheet with parchment and a light layer of olive oil.
  2. Lightly toss with oil and seasonings, and arrange over lined tray.
  3. Bake at 425 for 20 min, or until edges are browned.
