Slow-cooked onion soup

Ingredients: 

6-8 large sweet onions (as many as can comfortably fit in your slow cooker), peeled and cut into 1/4 or 1/8 inch thick slices
1/4-1/2 stick of butter (original recipe called for a full stick, but that's overkill)
1/2 tsp. salt (optional)
1/4 cup brown sugar (optional)
4+ cups beef stock
1/4-1/3 cup madeira cooking wine (or Armagnac, cognac, port, sherry, etc.)
Baguette, sliced and toasted
Gruyere cheese
Salt and pepper to taste


 

  1. Place the sliced onions, butter, salt and sugar into slow cooker.  Set cooker at Low and cook for 18-24 hours. Prepare for your house to smell like delicious cooking onions.
  2. Remove about half of caramelized onions to use in other recipes (tart, pizza, omelet, steak topper, etc.)
  3. Add stock, madeira, salt and pepper, and cook at medium-high heat for 10 minutes.
  4. Ladle into oven-proof crocks, top with crusty bread (I pre-toast mine in the oven to make it crispy) and gruyere cheese.  Place under broiler until cheese melts and bubbles.
