Smoked Salmon Benedict over a bed of Spinach

Ingredients

  • Wild Smoked Salmon
  • 1 Bag Organic Spinach
  • 1 Diced Shallot
  • Olive Oil
  • Free- Range Organic Eggs

Directions

  1. Preheat oven to to 350.
  2. Place salon in oven until warm
  3. Poach egg or pan fry
  4. Peel and dice shallot
  5. Heat Olive Oil over medium low heat
  6. Add shallot until it begins to carmelize
  7. Add Spinach saute until gently wilted

 

Tips / Substitutes: Add creamcheese for those not staying away from dairy.
