Ingredients:

1 lb chicken breasts
1 onion, diced
1 red bell pepper, seeded and chopped
4 garlic cloves, minced
2 tbsp chili powder
1 tbsp dried oregano
2 tsp ground cumin
1 tsp kosher salt
1/2 tsp ground black pepper
1 15 oz can white beans, drained and rinsed
1 15 oz can pinto beans, drained and rinsed
1 15 oz can corn, drained
2 10 oz cans tomatoes and chiles (Rotel) undrained
1 cup chicken broth
Optional garnish: freshly grated Parmesan
