South Indian lentils & vegetables

Ingredients: 

1/2 tsp mustard seeds
1/2 tsp cumin seeds
Red chilli
1/4 tsp asafoetida
6 curry leaves
Garlic
2 tbsp desiccated unsweetened coconut
22g red split lentils
2 tsp garam masala
1/2 tsp tumeric
4 tomatoes
Coriander
Mixed vegetables (broccoli pepper green beans cauliflower Aubergine)


Heat oil fry mustard seeds cumin seeds red chilli asafoetida curry leaves crushed garlic and dedicated coconut until coconut browns
Mix red lentils garam masala and turmeric stir in 450ml veg stock
Simmer mixture till lentils are mushy add veg and tomatoes
Add coriander
