Soy and Ginger Glazed Salmon

Ingredients: 

1 cup dry or medium-dry sherry
1 cup low sodium soy sauce
3/4 cup dark brown sugar
1 (3-inch) piece fresh peeled ginger, finely chopped
4 cloves garlic, finely chopped
2 (3- to 3 1/2-pound) whole sides of salmon with skin (1 to 1 1/2 inches at thickest part)
3/4 teaspoon salt
1/2 teaspoon black pepper
