Spiced Figs and Apple Jam

Ingredients: 

2 granny smith apples (500g), peeled, cored, chopped finely
2 cups(500ml) water
16 fresh figs (1 kg), chopped coarsely
1/2 cup(125ml) orange juice
1.1 kg(5 cups) caster (superfine) sugar, approximately
2 tbspfinely grated orange rind
3 star anise
1 cinnamon stick, halved
2 vanilla beans, halved lengthways
