Spicy Lentil Soup

Ingredients: 

3 tablespoons olive oil
1 large onion, chopped
4 cloves garlic, sliced, lengthwise
1/2 teaspoon cumin seeds
1/2 cup green lentils
1/2 cup red lentils
1 small dried chili, crushed (optional)
2 carrots, diced (=12 baby carrots)
2 stalk celery, diced
6 cups stock, vegetable
2 bay leaves
salt
freshly cracked pepper
1 tablespoon red wine vinegar
