Spicy Tomato Coconut Fish Soup

Ingredients: 

2 white onions, medium dice
2-3 habanero or Scotch bonnet peppers
3 tablespoons peanut oil
32 ounce canned fire roasted tomatoes
1 cup vegetable broth
1 14 ounce can coconut milk
1 crawfish Maggi bouillon cube
several sprigs of fresh thyme
2 1/2 pounds Arctic char fillets, skin on, cut into 1-inch cubes
salt and pepper to taste
