Spinach Casserole

Ingredients

  • 3 packages frozen chopped spinach
  • 1 medium chopped onion
  • 2 eggs
  • 1/2 cup reduced fat sour cream (or fat free)
  • 1 package (1 1/4 cups) of shredded Parmesan cheese
  • 2 Tbsp butter
  • Salt & pepper to taste
  • Small package of reduced fat crumbled Feta cheese - for topping

Directions

  1. Cook frozen spinach in small amount of water until thawed (or in microwave) - drain dry
  2. In small fry pan, cook onions in butter until tender
  3. Beat eggs
  4. Mix all ingredients (NOT FETA)
  5. Put into a greased casserole dish or square 9x9 baking pan
  6. Bake at 350 uncovered for 25 - 30 minutes (until center is set)
  7. Sprinkle top with feta cheese before serving
  8. Enjoy!
