Notes:

We just grabbed a cheap piece of round steak and voila! We serve it with refried beans and our Mexican rice (see our recipe)! Also great with left over meat.

4 large tortillas

  1. Sprikle a tablespoon of our fajita spice mix on each side of the steak and marinade in the fridge for aleat an hour.

  3. Slice into thin slices against the grain.
  4. Lay out a large tortilla and place about 1/4 of the meat onto the center of the tortilla, top with sliced onions, chopped jalapenos . Cumble queso fresco on top. Fold the sides in and tightly roll into a burrito shape.
  5. Brush all sides lightly with olive oil and grill in a hot skillet or flat griddle. We place a bacon press on top to help the burrito evenly grille until golden brown (about 2 minutes. Roll 1/4 and repeat grilling all four sides of the burrito until golden brown on all sides.
