Strawberry Leather

Notes: 

Now that strawberries are in season. It's time to use 'em up. We just bought 1 lb boxes last week for $1 a box and made preserves. This week we made this recipe and it's a winner!

Ingredients: 

2 pounds cut up strawberries
1/4 cup honey
1 teaspoon lemon juice


  1. Puree the strawberries in a blender or food processor.
  2. Strain through a fine mesh sieve into a medium saucepan, add honey & lemon juce, honey to even up the sweetness and the lemon juce to help naturally preserve it.
  3. Bring to a boil then simmer over medium-low heat until thick and reduced to about 1 1/4 cups, aproximately 1 hour.
  4. Preheat overn to 200 F. Line a 15"x10"baking pan with a non stick liner or parment paper.
  5. Pout on the hot puree and spread as thinly as possible.
  6. Heat in oven for about 2 1/2 - 3 hours.
  7. Cool on a raised rack for at least 1 hour.
  8. Place parchment paper on top and flip over the pan. Alowing the leather to cool for another hour or so.
  9. Peel off the original side of parchment paper. Using a pizza cutter. Cut into large rectangles and roll up with the top parchment paper on top. makes about 12 pieces.
  10. Store in a zip lock bag for up to a month.
