Ingredients: 

3 tablespoons extra virgin olive oil
1/4 cup raisins
1/4 cup pine nuts
1 tablespoon minced garlic
1 pound fresh spinach leaves
Salt and freshly ground black pepper
1/4 cup panko (Japanese bread crumbs), optional
4 boneless chicken breasts (about 1 1/2 pounds)
2 tablespoons balsamic vinegar
1 tablespoon Dijon mustard
