1 cup mushrooms
1 cup zucchini
1/2 cup onion
1 clove garlic
1 tsp. salt
1/2 tsp. basil
1 cup rice
2 cups swiss cheese
3 gardenburgers or ground turkey
Marinara sauce
Cut peppers in half and scoop out seeds. Cook peppers in salted boiling water for 5 minutes. Drain.
Spray pan and brown turkey and all other ingredients other than rice and cheese. Cook until tender.
Add cooked rice and 1/2 cup cheese. Stuff peppers and place in buttered baking dish. Spoon 1 tbsp. marinara sauce on each pepper.
Cover with tin foil and bake at 350 for 40 minutes. Uncover and sprinkle with cheese. Bake an additional 5 minutes.
