Ingredients: 

2 large shallots, minced
1 Tbsp olive oil
1/2 jar (8.5 oz) sundried tomatoes, julienned, drained
2 Tbsp wine (dry white or red, whatever you prefer - I used red)
3 to 4 oz. feta cheese, crumbled (I used Athenos brand flavored with lemon, oregano & garlic)
1/4 tsp salt
1/4 tsp freshly ground black pepper

2 large boneless chicken breasts, about 1-1/2 to 2 lbs., tenderloins removed

Flour for dredging (about 1 cup)
2 eggs, beaten with 1 Tbsp. milk
Panko breadcrumbs (about 1 cup), mixed with about 1/2 tsp. salt and 1/4 tsp. freshly ground black pepper, if desired
