Super health-nutty muffins

Modification: Add chopped dried apricots and dried cranberries soaked in apple cider instead of raisins

Ingredients: 

1 1/2 cups prepared Old WessexTM Instant Oatmeal
1/4 cup vegetable oil
1/2 cup Brown Sugar
1/2 cup white sugar
2 eggs
1 cup flour
1/2 cup whole wheat flour
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 teaspoon baking soda
1/4 teaspoon salt
1/4 cup raisins or other dried fruits


  1. Combine oil and sugars in a bowl.

  2. Add the eggs and the oatmeal to the oil and sugar, and mix well.

  3. In a separate bowl, sift together the other dry ingredients. 

  4. Add the dry ingredients to the other bowl.

  5. Put in muffin tin and bake at 350°F for 30 to 35 minutes.
