Sweet-Fire Chicken

Healthier option, chicken is not fried.
Substitute shrimp

Serves 4, but 2 could easily eat it all

Ingredients: 

2 tbsp olive oil
1 lb chicken breast, cut into 1” chunks
1 tbsp + 1 tsp minced garlic
1 large red pepper, cut into 1” pieces
1 medium sweet onion, cut into 1” pieces
2 8 oz cans pineapple chunks, in juice, drained
½ cup Thai sweet chili red sauce
1 tsp crushed red pepper flakes (more to taste)
Salt to taste
Pepper to taste
Green onion, chopped for garnish if desired


  1.  Heat oil in wok over medium high heat.  Lightly salt and pepper the chicken pieces.  Add chicken and 1 tbsp minced garlic to pan.  Cook until chicken is just done, flipping to get all sides.  About 5 minutes.  Remove from pan 
  2. In remaining oil, add a little more if needed, add pepper, onion and 1 tsp minced garlic. 
  3.  When veggies just begin to change color, add the pineapple chunks.  Continue cooking until all are just starting to get tender.
  4. Return chicken to the pan.  Add sweet red chili sauce and crushed red pepper flakes.  Lower heat and bring to a simmer.
  5. Simmer for an additional 5 to 10 minutes over low heat.  Serve with rice.  Top with green onion if desired.
Serve over rice.  1/3 cup whole grain brown rice is recommended serving.
