Sweet Pea Chicken Salad with Green Apples and Carrots

Ingredients

  • Chicken, 1 large breast
  • Peas (i use the frozen organic variety)
  • Carrots, chopped
  • 1/2 green apple, cubed
  • 1 Tbsp Mayonnaise
  • 1 Tsp Mustard
  • Scallions, chopped
  • Cilantro (optional)
  • Olive Oil
  • Salt
  • Pepper

Directions

  1. Grill chicken with salt, pepper, olive oil
  2. Allow to cool for a few minutes.  Slice chicken into cubes.
  3. Heat pan over medium heat.  Add carrots with a little water to lightly steam & sweeten.  Add peas and scallions.  Continue heating until peas are warm and remove from heat.
  4. In a large bowl, combine chicken, peas, carrots, green apple.  Add mayonnaise and mustard and mix with spoon for a minute or two until everything has a light coating.
  5. Serve with fresh cilantro on top.

Tips / Substitutes: You can use regular yogurt instead of mayonnaise.  Add curry powder and yellow raisins for a tasty twist.
