Ingredients
- Chicken, 1 large breast
- Peas (i use the frozen organic variety)
- Carrots, chopped
- 1/2 green apple, cubed
- 1 Tbsp Mayonnaise
- 1 Tsp Mustard
- Scallions, chopped
- Cilantro (optional)
- Olive Oil
- Salt
- Pepper
Directions
- Grill chicken with salt, pepper, olive oil
- Allow to cool for a few minutes. Slice chicken into cubes.
- Heat pan over medium heat. Add carrots with a little water to lightly steam & sweeten. Add peas and scallions. Continue heating until peas are warm and remove from heat.
- In a large bowl, combine chicken, peas, carrots, green apple. Add mayonnaise and mustard and mix with spoon for a minute or two until everything has a light coating.
- Serve with fresh cilantro on top.
Tips / Substitutes: You can use regular yogurt instead of mayonnaise. Add curry powder and yellow raisins for a tasty twist.
