Sweet Potato Soup with Lime

Ingredients: 

1-1/3 cups thinly sliced leeks, white part only
approximately 3-1/2 cups vegetable broth or more as needed
4 pounds Sweet Potatoes, peeled and cut into 1/2 inch cubes.
Juice of 2 limes
salt and pepper
1/4 cup chopped cilantro


Directions

  1. Put leeks and 1/2 cup vegetable broth in a large pot.
  2. Bring to a simmer over moderately high heat and cook 1 minutes
  3. add sweet potatoes and cook 4 minutes more
  4. Add 6 cups water, reduce heat to medium, and cook until sweet potatoes are soft, about 25 minutes.
  5. transfer to a food processor or blender and blend until smooth, adding as much additional vegetable broth as you need to make a soup consistency.
  6. Return to pot and stir in lime juice, salt, and pepper to taste. Reheat.
  7. Garnish with chopped cilantro if desired.
